"As Susie and I continued to work on our Christmas cookies in the kitchen, Sonni was in the living room taking her precious family recipe peanut butter cookies off the cookie sheets and putting them on the dining room table to cool. All of a sudden she burst out laughing. Uncontrollably! She was laughing so hard it took her several minutes to calm down enough to tell us what was so dang funny. Eventually she's able to breathe again and tell us that after eating her third peanut butter cookie and no understanding why they tasted strange, it dawned on her that she had actually forgotten to add the peanut butter!!"

I long for more time to play with the challenges over at Disney Scrappers!

Well, it is what it is and I think I just enjoy those moments when I do get to work on them more than ever. This layout is for Challenge #4 called "Kindy Sketchy". The challenge was to scrap something that wasn't really theme or attraction related. Shopping, landscaping, some piece of architecture, etc. And then to scrap it using one of Susan's sketches.

Tropical breezes. A tasty cocktail by your side. The sun warming your skin. The salty sea air. Impeccable Disney service. Sounds wonderful, doesn't it?

My dear friend, Kelly, has been dreaming these sweet dreams for a very long time. Longing to take her first Disney cruise. This past weekend her dreams came true. On the Disney Dream! To help her cherish those memories I created this album using the Pine Cone Press 12 Pocket and Tag Book Blank and Bo Bunny's Barefoot & Bliss collection.

Here are all of the individual tags from the pockets.

This was so much fun to create! I am now extra excited for my own 2 Disney Cruises I have coming up in February and March. I'm ready to sail away!

Printer Trays for the Guys

Many crafters have enjoyed creating unique wall art using the 7 Gypsies trays and I started to feel like I was missing the boat. I decided it was time to get on the boat and enjoy the ride! I bought two of the black letterblock printer's trays with the intention of creating gifts for some friends to hang in their new office space. Over time I picked up different hardware and embellishments from Tim Holtz and 7 Gypsies. I had such fun putting these together. It was yet another departure from my usual Disney projects for something with a masculine feel. These were going to be gifts for two guys that love the open road and the biked that take them there.

Each tray features photos of the motorcycle, photos of just a few of the places they've visited, maps, and apothecary jars with items from those destinations.

A small thank you to the guys who have allowed this girl to join them on their adventures. To go way out of her comfort zone to experience new things and places.

Happy Halloween! Paper Quilt & Boo Blocks

Have I mentioned how much I love Halloween?

Anyway, my friend Susan has a framed paper quilt for a few seasons and holidays. I have admired it for a long time and vowed to recreate it for myself. I wasn't very original on this one since I used the exact same Basic Grey "Eerie" papers that she did. But hey, if it ain't broke and you love Basic Grey, don't fix it! Susan's can be seen here. My friend Tami did her own version using Authentique's "Glowing" line and put it into a fabulous distressed frame. Hers can be seen here. Below is my version. I kinda like it.

I also used Basic Grey "Eerie" to make these Boo Blocks. I found a set of varying sized particle board blocks on clearance at Michaels. This was a fun use of scraps. It's difficult to see in the photos, but the scored circles actually have some crystal Stickles on the them to give them a spiderweb feel. So of course, I had to add spiders!

A few weeks ago I got the incredibly fortunate opportunity to take a FAM(iliarization) trip for travel agents onboard the Rocky Mountaineer. When I got home, I wrote a report for our agency’s Facebook page detailing this fantastic experience. I thought I would share it here as well. And guess what?? There's even a Disney tie-in!

Riding the rails

I recently returned from the trip of a lifetime aboard the Rocky Mountaineer, an extraordinary train journey through the Canadian Rockies. The Society of American Travel Writers has called Rocky Mountaineer the "Best Train Experience in the World". This being my first train trip, I don't really have anything to compare it to, but I'm pretty sure they're right!

Rocky Mountaineer offers several vacation options going beyond train travel to include helicopter tours, sightseeing tours, gondola rides, wine tours, and overnight stays in some of the most spectacular hotels in North America with the Fairmont Deluxe option. If you're taking an Alaskan cruise that ends in Vancouver, the Rocky Mountaineer is the perfect add-on! Holland America and Disney Cruise Line have partnered with Rocky Mountaineer to offer unforgettable experiences both on land and sea.

My journey began in Vancouver where I stayed at the beautiful and historic Fairmont Hotel Vancouver located in the heart of the city. The first of several hotels along my journey built by the Canadian Pacific Railway. My dinner at Griffin’s Restaurant was absolutely delicious! As an extra special treat for myself after my long travel day, I pre-arranged a "Bath Butler" through the Fairmont's Absolute Spa. My bath butler came to my hotel room and drew an Aromatherapy Spa Bath for me. I was able to choose from 3 essential bath oil collections: De-Stressor (Lavender), Deep Sleep (Chamomile), or Rare White Grapefruit (Grapefruit, lemon & tangerine). I also got bubbles! It was a heavenly experience to relax by sinking into the warm fragrant water and have a spa experience right in my own hotel room. Afterwards I crawled into my incredibly cozy bed, relaxed but excited for my journey to begin.

It was an early start the next morning to transfer from the hotel to the Rocky Mountaineer train station in time for our 7:30am "All aboard!" call. Hell's Gate, the narrowest part of the Fraser River

We were taking the “First Passage to the West” journey from Vancouver to Kamloops to Banff. Leaving Vancouver we traveled through the fields of the Fraser River Valley then the temperature rainforests of cedar and Sitka spruce trees. Streams meandered through and lakes dotted the landscape. We followed the Fraser River past Hell’s Gate and eventually met up with the Thompson River. The landscape changed dramatically from lush green trees to rocky canyons. We watched for osprey, eagles, bighorn sheep, and elk amongst the sagebrush. In Kamloops, we had moderate overnight accommodations. Rocky Mountaineer doesn’t travel at night so that you won’t miss any of the amazing scenery as you snooze the night away.

The next morning we were back on the train and headed east towards Banff, continuing along the Thompson River. Along the banks of Shuswap Lake where the trees are once again green and moved up towards the peaks of the Rocky Mountains. Waterfalls cascaded down mountainsides. We wove through the Spiral Tunnels up, up, up into the clouds. Incredible snowcapped peaks could be seen at the full height through our glass domed coach. We saw moose and deer, but no bear even though they are often seen along the tracks. The scenery was absolutely breathtaking. There are just no words adequate enough to describe the sights you see from the comfort of your seat… with a glass of wine or a glass of Bailey’s in hand!

We bade a fond farewell to the Rocky Mountaineer in Banff and made the very short transfer to the Fairmont Banff Springs. Yes, this historic hotel is as grandly gorgeous as can possibly be. Truly a “Castle in the Rockies”, it is known for its stunning views and spectacular golf. According to Golf Magazine, “The Devil’s Cauldron (hole #4 on the Stanley Thompson Eighteen) is recognized as one of the top 18 holes to play in the world.” I am deeply sorry to say that I didn’t get to visit the 38,000 square feet Willow Stream Spa offering 3 waterfall treatment whirlpools, indoor European mineral pool, and outside whirlpool. Their brochure reads, “Seek rejuvenation in a land created by ice and time. This is where energy radiates and strength surges. Blue skies, snow-capped mountain peaks, emerald glacier-fed lakes, and rolling valleys gather together in a magical force. Restore your balance and find your energy.” What an eloquent description of this area.

Boarding a bus, we headed off for an afternoon of exploring Yoho National Park, making stops at the Natural Bridge and Emerald Lake before arriving at the Fairmont Chateau Lake Louise. The clouds were low and the rain came down, but the beauty of this area cannot be disguised. The rain didn’t stop guests from renting bright red canoes and paddling across the lake for a better view of Victoria Glacier. The emerald green color of the water comes from rock flour carried into the lake by melt-water from the glaciers that overlook the lake. And it’s amazing how it shines! If I had the time, I would have loved to take a walk around the lake with the Chateau’s Director of Pet Relations, Marcus. He is an adorable yellow lab who strolls through the lobby when he isn’t being taken on walks by hotel guests. The hotel is very pet-friendly. All pets staying at the hotel are greeted in their room with a customized welcome letter from Marcus along with:

• Information sheet on pet activities
The price is $25 CAD/night. $10 of the $25 nightly fee supports the Canadian Guide Dogs for the Blind program. How cool is that???

The next day we took a bus to Calgary and the elegant Fairmont Palliser. Located in downtown Calgary, it is popular for corporate visitors. For those traveling on the Rocky Mountaineer from Calgary to Vancouver, there is a check-in location inside the Calgary Tower right next door. It is within walking distance to plenty of shopping and dining opportunities. Our dinner at the Rimrock was exceptional. And again, the cozy Fairmont beds had me sleeping very well.
This truly was an experience that you should put on your “Bucket List”. There is no better way to see the beauty of the Canadian Rockies than to stay in the historic Fairmont hotels and ride the rails with Rocky Mountaineer’s GoldLeaf service. Officer Les Manly ~ Disney Scrappers Challenge #8 Version #2

Because the first version of this challenge was created for someone else, I decided to do a second version for myself. This time I took the character part of the challenge in a different direction. Obviously the first thing to come to mind when thinking of Disney characters is the classic animated characters. I did that with version #1 of this challenge. So in version #2, I decided to go with one of the Citizens of Hollywood characters (aka Streetmosphere) from Disney's Hollywood Studios.
Like alot of people visiting the park, I used to scurry by these amazing actors for fear that I would be pulled into their act. Or I was in too much of a rush to get to the Rock-N-Roller Coaster to stop and watch their performances. A few years ago, my arthritic knee pretty much forced me to sit down on a bench to take a rest. In doing so, I was treated to a street performance that had me laughing till my sides hurt. Ever since, I have made sure to take the time to enjoy the antics of the Citizens of Hollywood. And if I should get pulled into their act, then sign me up!
According to Studios Central.com: "Officer Leslie Manly (he goes by Les), is a veteran of the Hollywood Police Department and is the "winner of the rookie of the year award, 5 years running". Officer Manly was raised by his mother, Leslie Smart and now he works in the Hollywood Police Department enforcing the laws of Hollywood, such as writing citations to park guests who double park their strollers or speeding tickets to park guests in ECV's."

Minnie & Me ~ Disney Scrappers Challenge #8 Version #1

Sonni offered to make a scrapbook album for a dear friend who had recently returned from a trip to Walt Disney World with his wife and granddaughter. She hasn’t scrapped in awhile and was feeling kinda stuck. I certainly know that feeling. Starting at pictures, papers, and embellishments. Just staring. Not actually getting anywhere. So I offered to help her out a little. Of course, I directed her to Disney Scrappers and to the blogs of my very talented friends. We spent several hours scrapping together last Sunday. We managed to get a few pages done and get those creative juices flowing.

There were 3 pictures of this adorable little girl with her Minnie Mouse plush that I just had to scrap. It’s kind of odd to get excited about scrapping photos of a friend of a friend’s granddaughter that I’ve never met, but she’s just so darn cute! I took these photos home with me at the end of our crop. I knew I had some Basic Grey scraps that had the perfect colors for these photos. Plus, this challenge popped into my head!

The challenge, Kindy Sketchy #2, was to scrap a Disney character and to do so using one of Susan’s sketches and 4 different patterned papers. Perfect!!

I did blur her face in these photos since she isn't someone I know and didn't feel it right to use her face wihtout her family's permission.

Asante Sana ~ Disney Scrappers Challenge #3

Someday I will be able to say that I’ve stayed at each of the Disney Resorts… with the exception of the Value resorts. Yes, my name is Laurie and I am a resort snob. I admit it! I have stayed at 2 of the Value resorts so I can honestly say that I’ve given them a fair chance. Been there, done that, not a fan. I will stick with the Moderates and if fortune smiles upon me (or if the boss is paying!!) then the Deluxe or Deluxe Villa resorts.

Last November, Sara (my boss), Frank (Disney sales rep for MN, ND, & SD as well as our dear friend), and I had to go to Orlando for a conference which was taking place off Disney property. We went down a day early so we could do a little playing at the Epcot Food & Wine Festival. Disney’s Animal Kingdom Lodge was calling to me so we decided to spend our one night on-property at this magnificent resort. And since the boss was paying….! I had never stayed at this resort before and couldn't wait to check it out. I wrote a report on my experience and shared it here on my blog as well as on our travel agency’s Facebook page.

This is for the Disney Scrapper's Challenge #3 "On the Wild Side". Our additional challenge was to use animal prints (check!) and to add a Mickey icon (check!).

Aquaduck ~ Disney Scrappers Challenge #2

I'm happily plugging along with the Disney Scrappers Challenges...even if I am taking alot longer to get these pages done than most others who are participating. Fortunately for me there are no deadlines and it isn't a competition! I was excited to see that Tami included the Aquaduck in Challenge #2 "Caution You May Get Wet!". It's a first for the cruise industry and I was extrordinarily fortunate to be amongst some of the first people to squeal my way through this water roller coaster. The additional element to this challenge was to add red, orange and a circular piece to the page. Got it!

Finding Nemo Submarine Voyage ~ Disney Scrappers Challenge #1

I am very excited about having new Disney Challenges to play with! Especially when our tried and true challenge master, Tami Bastiaans is hosting them! She is so great at not only creating the basic challenge but also giving us something extra. A little tidbit to add to make it even more of a challenge.

Disney Scrappers Challenge #1 was called "Under the Sea" in celebration of the new attraction at Disneyland, Ariel's Undersea Adventure. There were several attractions that we could play with, all having a connective theme of "the big blue." I decided to go with the Finding Nemo Submarine Voyage at Disneyland.

Our additional challenge was to include waves and/or bubbles on the page. No problem there!

My love for the submarine rides at Disney Parks goes back a very long time. I was devastated when the attractions at both Walt Disney World (20,000 Leagues Under the Sea) and Disneyland (Submarine Voyage) closed. When Walt Disney World completely removed their lagoon, my hopes of it reopening were dashed. I did this layout back in 2007 as a memorial.

"My memories of this attraction were very faint. But now, after doing research for this layout in remembrance of one of my favorite attractions, I've found that my heart remembers every detail. I remember thinking that the Nautilus, at Walt Disney World's 20,000 Leagues Under the Sea, was one of the most beautifully frightening things I had ever seen. I was convinced that the giant "eye" was watching every move I made while I impatiently waited in line to enter the belly of the beast. I was positive that, once I was seated inside that elegant machine, that it took me to the bottom of the ocean. That we heard fish talk with the use of powerful sonar hydrophones. That we actually sailed under polar ice caps and saw the wreckage of ancient wooden sailing ships from long ago. We had discovered the lost continent of Atlantis and all its golden treasures. Sea serpents were real and were led through the ocean depths on leashes held by mermaids. And a giant squid was prepared to take us to our deaths unless Captain Nemo and his loyal crew worked fast with their electrical repellant charges. When the ride was shut down in 1994, I was truly heartbroken. I wished for another chance to board the Nautilus and "journey through liquid space" just one last time. Today, a playground stands on the spot that was once a crystal clear blue lagoon. But the Nautilus is not forgotten. A carving of the submarine can be found for those who take the time to look for it. A small but powerful reminder of an E-ticket attraction that will live in my heart forever."

Apparantly Disneyland wasn't ready to give up quite yet. They waited for the right movie to come along that would breathe new life into the attraction. Allowing new technologies to take over and end the operational nightmares that caused the attractions to close.

Along came a little clown fish... and the rest is history.

Boys & Their Bikes

Next week we leave once again on the grueling but exhilarating trek to North Carolina via truck and motorcycle. We are packing our things and getting the bikes ready to go. And I really need to get back to doing that, but I wanted to participate in the DCWV Stack-a-holic Template Challenge. It features one of Susan's sketches so I just had to join in! I created this layout using photos from last year's road trip featuring 5 guys who made the trip a true joy.

My Tigger

This is the first layout I've done of my Tigger since I lost him on January 27, 2010. I had a wonderful 16 years with my cuddlebug and I miss him dearly.

These photos were taken during a happy time. A vacation on the North Shore of Lake Superior in August 2007. Sitting on the rock beach next to a bonfire. Worn out from a long day of hiking and swimming.

The envelope contains a curl from his head. It was clipped while he slept in my arms just hours before we brought him to the vet to be put down. It was in my arms that he took his last breaths that night. It was one of the hardest things I've ever done, but it was time. He is now in the place where happy Tiggers go. He waits for me there. I will see him again.

This card was designed using a sketch from Basic Grey Challenges. I needed some card inspiration since I haven't done one in quite awhile. So many great ideas over there! I thought it was so cute that I made a birthday card for my friend Kelly and a Mother's Day card for my Mom using the same sketch. I also only used Basic Grey scraps for these cards. Love getting some good use out of my ridiculous pile of scraps!

Being able to completely lose yourself in a moment is a rare and beautiful thing. To feel absolute serenity and relaxation. Time doesn't matter. It's those precious instances where you are actually able to achieve the near-impossible and can quiet your mind. You can melt into a moment.

According to Wikipedia: "Thalassotherapy (from the Greek word thalassa, meaning "sea") is the unproven medical use of seawater as a form of therapy. The properties of seawater are believed to have beneficial effects upon the pores of the skin. In thalassotherapy, trace elements of magnesium, potassium, calcium, sodium, and iodide found in seawater are believed to be absorbed through the skin. The therapy is applied in various forms, as either showers of warmed seawater, application of marine mud or of algae paste, or the inhalation of sea fog. Spas make hot seawater and provide mud and seaweed wrapping services."

At Zoëtry Paraiso de la Bonita in Riviera Maya Mexico, they offer a Thalassotherapy pool. An entire swimming pool filled with fresh, clean seawater that is blissfully warm. It's essentially a big seawater bathtub. I was in complete and utter ecstasy! I have no idea how many hours I spent here. Because time was completely lost to me. A true oasis.

The white water jet border towards the bottom of the page was created by making swirls in Making Memories paint with a brush as it was starting to dry. Then Glossy Accents were added to create the "bubbles".

As we sat on the beach at Zoëtry Paraiso de la Bonita Riviera Maya, a local woman walked down the beach with her golden retriever. She was throwing a small round object into the sea for her deliriously happy doggie to retrieve over and over again. At one point, he stepped out of the water right in front of us, dripping wet. He began chewing on the object determined to break it open. In just a matter of seconds we heard a small crack. The dog dropped the broken pieces and ran off to catch up with his owner, pleased himself for completing his task. We were curious as to what had been the focus of his fun so we retrieved the pieces. It was a tiny coconut!

Someone grabbed a lime from a recently depleted margarita glass.

And so it began...

These trying times have got me trying to change the way I scrap. In the past, I would grab a photo that I wanted to scrap, take it to Archivers, and buy everything I needed (and more!!) to create my layout. As much as I liked doing that, it's just too darned expensive. Now, I look through my ridiculously huge stash and find paper and/or embellishments that inspire me. Then I look for the photo that will match. So much cheaper. And what wonderful things I'm finding in the depths of my very own scrap room!

I bought this chipboard album years ago. The papers are from a Capture the Magic scrapbook kit purchased at Walt Disney World. I challenged myself to only use things from my stash and not spend a single penny to complete the album. Who knew I had all this great stuff? The park icon stickers needed some punch so I used Stickles to make them glisten. Then I just ran with it because obviously, the fireworks needed to glisten too!

There are no photos in the album because I think I'm going to give it away as a gift. Maybe I'll keep it. I'm very undecided. Time will give me the answer I'm searching for. Until then I can share it with you here.

I wanted to create a place in the album for a Key to the World card. This little bit of memorabilia is kinda fun to keep because its personalized with your name and the dates of your Walt Disney World vacation.

The monorail did not come as part of the album. I made it using Sizzix Mat Board and the monorail template that my friend Susan created. It serves no purpose whatsoever, but I really felt that this album wouldn't be complete without a monorail!

La Hacienda de San Angel ~ Mexico Pavilion, Epcot

I have long been a big fan of the table service restaurant inside the Mexico pavilion called San Angel Inn. Mexican food is a staple in our house. When I heard that Disney would be transforming their lagoon-side quick service restaurant into a new "flex space" restaurant, I was really excited to visit and taste what they had to offer.

The "flex space" restaurant offers quick service dining called La Cantina de San Angel during lunch . This includes outside terrace seating as well as indoor (and air conditioned!) seating in a section of the dining room with a total capacity for 250-300 guests. For dinner the restaurant tranforms to a table service restaurant called La Hacienda de San Angel with seating for 250 guests.

There were three of us dining together. We began by ordering the Botana, Queso Fundido, and the Taquiza and shared the bounty between us. Botana os a sampling of traditional Mexican favorites; chicken tostada, Chilorio sope (marinated pork), and cheese empanada. Queso Fundido is Melted cheese with poblano peppers,chorizo and flour tortillas... NOT a traditional queso dip that so many have become accustomed to. Taquiza is a taco trio featuring Rib eye taco with chipotle salsa,roasted chicken taco with salsa verde and Chilorio (marinated pork) taco.

The appetizers were just delicious! We cut everything up (as much as we could) so that we each got a bite of every little morsel. It was like having a mini buffet right there at our table. I find it impossible to choose a favorite between them because it's a solid tie between the Botana and Taquiza. So I suggest getting both just like we did!

For dinner we ordered the La Hacienda which serves two people. But with the fabulous appetizers already warm in our bellies, this was going to be perfect! The La Hacienda is a mixed grill offering flank steak, chicken al pastor, chorizo and vegetables, served with beans and fresh salsas. Delectable!! We were like ravenous dogs not leaving a single crumb behind.

The large windows give you a beautiful view of the Seven Seas Lagoon. I understand that it is a great place to view Illuminations: Reflections of Earth. However, I believe that Illuminations should be seen outdoors with absolutely nothing to block your view. But that's just my opinion.

There was no room for dessert so I don't have any opinions to share with you on those. But I've personally never been much of a fan of Mexican desserts anyway. I would much rather fill up on the impressive savory options La Hacienda de San Angel had to offer.

Pizza and Sangria! Via Napoli ~ Italy Pavilion, Epcot

Pizza is one of those foods that everyone loves but that everyone has very personal preferences about. Thin crust, thick crust, hand tossed, Chicago-style, New York-style, etc. It's something that had been re-invented over and over again because of varying tastes. But let's go back to Naples, Italy where pizza has its origins. Or at least to Epcot at Walt Disney World where their new restaurant, Via Napoli, has taken pizza back to its roots.

How is this pizza different? Well, it's all about the perfect ingredients and wood-fired pizza ovens. It begins with, of all things, the water! It comes from a source in the U.S. that is similar to the alkaline of the water in Naples. Talk about going the extra mile for authenticity! Speaking of mileage, the handmade mozzarella cheese has some serious frequent flyer miles. It's actually flown in from Italy. Only fresh San Marzano tomatoes are used. No processed canned sauces here.

Strict guidelines must be followed to become a true certified "Vera Pizza Napoletana" pizza. Proper ingredients are just the start. It also requires proper technique. "Pizza dough kneaded either by hand, or with a low speed mixer (fork or spiral). No mechanical dough shaping, such as a dough press or rolling pin, are allowed". Then there is the wood-burning pizza oven. "The real Pizza Napoletana must be cooked in a wood-fired dome oven operating at roughly 900ºF." This is serious business, folks! Via Napoli received its official certification in January 2011. The same month I had the intense pleasure of tasting my first bite of this amazing pizza.

The first thing I noticed was the three wood-fired ovens in the open kitchen. They are named for the three active volcanoes in Italy: Stromboli, Etna, and Vesuvius. Each one has a different face with a fiery open mouth ready to bake the pizzas within. Even the pasta dishes are baked in these ovens.

There were 5 of us in our group so we decided to order the build-your-own Mezzo Metro pizza which serves 3-5 people. You start with the traditional Margherita pizza with red tomato, white mozzarella, and green basil to resemble the red, white, and green colors of the Italian flag. From there you can add toppings that include eggplant, Italian spicy sausage, Fontina cheese, pepperoni, prosciutto, red peppers, artichokes, olives, anchovies, mushrooms, onions, zucchini, parma cotto ham, arugula, and chicken sausage. Being simple Minnesotans trying to please 5 different palates, we went with the Italian spicy sausage and pepperoni. Three of us also decided to split a pitcher of sangria which is a blend of Italian wine and fresh fruit.

After such a description, it would be predictable for me to say that this was the best pizza I have ever had. And ya know, I'm ok with being predictable! It was truly fantastic. There wasn't a single piece of pizza left on the pan or a bit of crust left on anyone's plate. The fresh ingredients were obvious in the amazing flavors. The sangria was the perfect beverage to compliment the meal. Reservations are highly recommended for this 300-seat table-service restaurant open for lunch and dinner.

Margaritas at La Cava del Tequila and La Hacienda de San Angel ~ Mexico Pavilion, Epcot

So after my trip to La Cava del Tequila in November 2010, I knew I had to return during my trip in January 2011. But this time it was gonna be all about the margaritas!! Let me begin by saying that I think a girls weekend at Walt Disney World is a fantastic way to get enjoy some female bonding time. There are literally dozens of cute little spots in Epcot's World Showcase to sit and enjoy a cocktail. And of course, amazing places to dine while you talk some "girl talk". It just doesn't get any better than that! Having learned that La Cava is a fabulous way to preface a dinner in one of the Mexico pavilion's restaurants, we decided to do just that.

We had about an hour before our dinner at the new La Hacienda de San Angel. I wanted to try one of the appetizers La Cava offered that I didn't try during my previous visit. Just outside the door of La Cava is a large copy of the menu for you to look over. We were studying it when our waiter came out and started making recommendations. When he said that their margaritas are made with fresh-squeezed limes, I was sold! Fresh lime is an essential requirement to a great margarita, in my opinion. The three of us ordered the Classic Margarita as well as the Tostadas de Tinga, which is roasted tomato and chipotle pulled chicken tostadas, with avocado, black refried beans, Valentina sauce, topped with queso fresco and sour cream. All I can say is DELICIOUS!!! I found myself ravenously sipping down that margarita. The chicken tostadas were absolutely scrumptious. I could taste each element of the many layers of flavor. The platter comes with 3 small tostadas so we each got 1. We wanted to order another platter but we refrained since we knew we had a big meal ahead of us.

When we arrived at La Hacienda, we decided that we just had to have the La Hacienda Margarita Flight. They offered 6 different kinds of margaritas on their menu which you could order in full sizes.

Classic ~ tequila, orange liqueur, fresh lime juice, agave nectar syrup, with cactus-lemongrass salt

Mango Blueberry Basil ~ tequila, coconut rum, orange juice, mango, blueberries, basil, with hibiscus Himalayan salt

The flight lets you choose 5 of the 6 options to sample in shot glasses. An actual tequila ambassador form Tequila, Mexico came to our table to discuss the flavors. Between the three of us we tried them all. The only one I didn't really care for was the Rosita. Because of the roses, it kinda tasted like something I should be bathing in instead of something I should be drinking. I give a full tumbs-up on all the other flavors. Once we were done, the tequila ambassador returned to ask us which was out favorite. Mine was the lime raspberry. Be sure that you order a full-size glass of your favorite flavor to accompany your amazing dinner when you visit La Hacienda!

Who likes tequila!?!

If you're a fan of tequila and margaritas, then you have to be sure and stop at La Cava del Tequila during your next trip to Walt Disney World. Located inside the Mexico pavilion inside Epcot, this intimate little spot offers over 70 different kinds of tequila. Never knew there so many to choose from? Neither did we!!

According to Wikipedia.. Tequila is a blue agave–based spirit made primarily in the area surrounding the city of Tequila, 65 kilometers (40 mi) northwest of Guadalajara, and in the highlands (Los Altos) of the western Mexican state of Jalisco. The red volcanic soil in the surrounding region is particularly well suited to the growing of the blue agave, and more than 300 million of the plants are harvested there each year. Agave tequila grows differently depending on the region. Blue agaves grown in the Highlands region are larger in size and sweeter in aroma and taste. Agaves harvested in the Lowlands, on the other hand, have a more herbaceous fragrance and flavor. Mexican laws state that tequila can be produced only in the state of Jalisco and limited regions in the states of Guanajuato, Michoacán, Nayarit, and Tamaulipas. Mexico has claimed the exclusive international right to the word "tequila", threatening legal actions against manufacturers in other countries.

In November 2010, I visited La Cava del Tequila for the first time since it opened in 2009 with my friends Sara and Frank. Our waiter suggested we try the La Cava Tequila Flight. It consists of three shots of tequila and served with sangrita, lime, and salt. Our waiter explained the three kids of tequila we would be sampling and how we should drink them.

First we started with the tequila blanco which is completely clear and the boldest of the three in flavor. Blanco is either bottled immediately and not aged at all or it is aged for less than 2 months in steel or neutral oak barrels. We were instructed to put some salt on our tongues, drink the tequila blanco, bite into the lime, then drink the sangrita. Sangrita is a common accompaniment to tequila blanco and is made with tomato, onion, citrus juices, and spices. The best way we can describe it is pico de gallo in liquid form.

After we caught our breath from the blanco and sangrita, we moved on to the tequila reposado which has a light amber color to it. Reposado has been aged between 2 months and 1 year in oak barrels of varying sizes allowing for richer and more complex flavors. Our final shot was the tequila añejo which is a much darker amber color than reposado. Añejo is aged a minimum of one year, but less than three years in small oak barrels that have been previously used to rest reposados. Preferred barrels are those that were also previously used in bourbon distilleries to give a rich flavor and even deeper color. With our heads spinning a bit, we left La Cava to head to our dinner reservation. This proved to be a smart choice and the way we recommend visiting La Cava. Go there for your pre-dinner tequila flight or margarita and then get some dinner at either San Angel Inn or the new La Hacienda de San Angel. Our flight was an educational experience that we really enjoyed.

Las Amigas con Margaritas

Over the last few years, my drink of choice has quickly become the margarita. But only if it is made with fresh lime juice. That's the key! Epcot's Mexico pavilion recently added the La Cava del Tequila, an intimate hideaway serving tapas-style dishes and more types of tequila than I ever knew existed. Their margaritas are absolutely delicious. They slip down very easily... a little too easily! I highly recommend stopping here for a margarita and an appetizer of chicken tostadas before a dinner at San Angel Inn or the new La Hacienda de San Angel. I also recommend making a visit to Walt Disney World with your girlfriends. There are literally dozens of cute little spots in World Showcase to sit and enjoy a cocktail. And of course, amazing places to dine while you talk some "girl talk". It just doesn't get any better than that!

Castaway Cay

I could spend hours just wading through the crystal turquoise waters of Castaway Cay. Fish of every color go darting by and sometimes even stop to gaze at me wondering what kind of strange creature I must be. Shells and sand dollars are scattered on the sea floor. I've seen sea urchins and sea cucumbers. In January Susie, Paul, and I found this gorgeous orangy-red starfish. We pulled him from the water just long enough to snap a photo and quickly study his spiny surface. Then we carefully placed him back in the water for another lucky Disney Cruise Line guest to discover another day.

Walt Disney's famous line has proven again and again to be an enormous understatement in the amazing talents and creativity of the Walt Disney Company. And they've done it again! Ladies and gentleman, the Disney Dream!

I was amongst the very lucky few to secure a stateroom onboard the Dream for the Magical Preview Cruise where Disney's EarMarked Conference was to take place for 2011. Never in the Conference's 7 year history has it ever even come close to selling out. But this year, it sold out in less than 3 hours!! And really, why wouldn't it?? We got to be some of the very first guests onboard Disney Cruise Line's newest ship that had only arrived in America a few days before from the Meyer Werft shipyard in Germany.

I have been watching the Disney Parks Blog for months to see the construction progress of this gorgeous lady. We first got a glimpse of her in all her glory as she slipped from drydock and touched water for the first time in a celebration fit for a queen. She sailed across the ocean and arrived in her home of Port Canaveral Florida to the cheers and happy tears of hundreds of Disney cast members on January 4th, 2011. And on January 19th, she was christened by her godmother, Jennifer Hudson in a spectacular ceremony that only Disney could produce. She took my breath away from the moment I set foot in her grand Atrium. The chandelier sparkled overhead. Every banister and railing absolutely glistened. The staircase looked like like belonged in a palace built for royalty. But then, when you're sailing with Disney, you feel like royalty!

I was able to bring my husband, Dan, and our dear friends, Paul and Susie, with me on this cruise. It would Paul and Susie's very first cruise so Dan and I were excited to have them share this with us.

Since our stateroom wasn't quite ready, we made our way to Cabanas, which is the buffet restaurant onboard ship. Everything was of course, delicious! The seagulls from Finding Nemo can be found throughout the restaurant keeping watch to see if anyone leaves any table scraps behind. Poised and ready to say, "Mine! Mine! Mine!" By the time we were done, our stateroom was ready. We were granted a Deluxe Oceanview Stateroom with Verandah which was fabulous! The staterooms onboard all of Disney Cruise Line's ships are some of the largest in the industry. The beds have Sealy Posturepedic Premium Plush Euro-top mattresses and the linens are 100% Egyptian cotton. There are iPod docking stations and LCD flat screen televisions. And each stateroom comes with two complimentary "wave phones" for use onboard ship! Just came out of the spa and you want to know where your friends are? Just call them up on their onboard wave phone or send them a text. How cool is that??

My guests settled into our room and began to explore the ship while I went off to the first general session of the Conference. It was a short session but we were all very quick to give a huge round of applause to Disney Cruise Line president, Karl Holz, for giving us this amazing opportunity. We were told that we were being given a $50 onboard credit per stateroom as well as 1 bottle of wine per night at dinner. Wow!! The generosity was amazing! Soon, by boss Sara and I were out on deck with our guests ready for the Sail Away party. Waitstaff served us complimentary Tattinger champagne in commemorative keepsake glasses. Our glasses were constantly refilled and we all ended up with at least 2 glasses to bring home. Mickey and the gang led the party. When it was time to set sail, the Dream's whistle blew her horn to the tune "A Dream is a Wish Your Heart Makes." I immediately teared up...I'm doing it again now just writing this!

Our first night's dinner with Disney Cruise Line's rotational dining was at Animator's Palate. This was always my favorite restaurant onboard the Disney Wonder so I was so happy to find it on the Dream as well. But it's certainly not the same! Crush the sea turtle is the star of the show in this dining room. For those familiar with Turtle Talk with Crush at Epcot, you know what amazing experience it is to actually be able to converse with an animated character. To have him see you and talk to you is a feat I just can't comprehend. And in Animator's Palate, he goes from screen to screen around the dining room talking to diners! The food was just scrumptious. We enjoyed the first bottle of wine together and savored each morsel of our fabulous meal. I was quickly exhausted by our long day and cruising always lulls me to sleep anyway. So I was off to bed right after dinner and Susie decided to do the same. The guys decided to hit the Buena Vista Theater and see Tron:Legacy. When Susie and I arrived in the stateroom, I found a gift of a creamy soft blue blanket with Disney Dream stitched in the corner. With it was a card from the ship's captain thanking us for sailing onboard the Dream. Once again, Disney's generosity touched my heart.

I woke the next morning and went to breakfast in Cabana's. We were still sailing towards to port of Nassau as I dined on eggs, bacon, and coffee. Susie ate with me since she had an 8:00am appointment in the Senses Spa and Salon for a pedicure and a facial. We parted ways as I headed off for the 8:00am Conference general session leaving the guys snoozing away in the stateroom. Sara and I spent the session listening to speakers and getting updates on what Disney has planned for Disneyland, Walt Disney World, Disney Cruise Line, and Adventured by Disney. Early in our session, we could feel the ship's thrusters turning us around which indicated that we had arrived in Nassau. We were out of Conference by 12 noon so it was time to get the swimsuits on and hit the hot tub!

We spent our afternoon relaxing in the hot tub and chatting. We met up with other friends and enjoyed our time laughing, sipping cocktails, and sitting in the sun. Disney Cruise Line is the rare cruise line that lets you bring your own alcohol onboard the ship. Yes, it's true! As long as it's in a closed bottle and you are carrying it onboard the ship yourself (not in your checked luggage that porters are delivering to the staterooms) you're golden! There is a sign at the security check point that you go through at the ship's terminal that states you cannot bring in any alcohol. But to clarify, that just means you can't walk in with a cocktail in your hand. Disney Cruise Line is also one of the rare cruise lines that gives you free unlimited soda onboard, so you've got free soda mixers! I realize that I'm sounding like an alcoholic here and I can reassure you that I'm not. But I do appreciate having a few cocktails when I'm on vacation. So I had a bottle of margaritas mixed up and ready when cocktail time arrived. Dan had some rum and Paul had some vodka. The bottles were kept in our stateroom. They would go to the soda stations and fill a cup with soda, grab an empty cup, and get a cup of ice. Down in the stateroom they would fill the empty cup with rum or vodka. Back up on deck they mixed up their drinks and sat back to relax, cocktails in hand. It wasn't the most convenient option, but it was inexpensive! Our stateroom attendant even kept the ice bucket in our stateroom filled with ice so we could have a drink as we got ready for dinner each evening. We did have to have all the alcohol we brought onboard consumed before we got back to Port Canaveral so it didn't fall under US customs restrictions.

Sara and I saw that the line for the AquaDuck wasn't very long so we hiked up the stairway and got ready to ride the first water coaster at sea! Water is propelled through the clear plexiglass tube and pushes your inner tube along through drops and turns along the way. Even off the side of the ship!!

What a riot! I giggled like a small child the entire time.

It was my turn to visit the Senses Spa & Salon. I had an appointment for an Elemis Skin Specific Facial. When the aesthetician brought me back to the treatment room, she asked me questions about what I wanted for my facial. I explained that getting a facial is my indulgent pampering. I didn't like extractions (removing blackheads which can be painful) and just wanted the relaxing quiet experience. She said that was no problem at all. And boy, did she deliver!! Not a word was spoken. She had the lightest touch. I absolutely melted into the table. I almost fell asleep! That never happens to me I would have to say it was one of the best facials I have ever had. Later, I asked Susie about her Spa experience that morning. She said it was fantastic. Apparently her aesthetician was much more talkative which was just fine by her. Clearly they do an excellent job of catering each experience to the individual needs and desires of each client. Now that is the sign of a good spa!

I quickly went to out stateroom and dressed for dinner and the show. Dan, Paul, and Susie were already in the Walt Disney Theater watching "Villains Tonight!". I caught the last few minutes of the show. The others said they thought it was great. Especially when Hades, knowing the Conference was taking place onboard, made a joke about travel agents during the show. Kinda disappointed that I missed that! But hey, my facial was totally worth it.

It was Pirates IN the Caribbean night and we found bandannas in our stateroom as gold coin chocolates. We donned our bandannas and went up on deck for the pirate party featuring Mickey Mouse, Captain Hook, and Jack Sparrow.....sorry..... Captain Jack Sparrow!

Dinner that evening was at the Enchanted Garden. Designed to resemble the gardens of Versailles, this restaurant find you wondering if pixies can be found flitting between the pink glass flower light fixtures. Once again, the food was fantastic. My steak had incredible flavor. I should note here that people who have never cruised before might be very interested to know that you can order as many things of the menu as you'd like. If you want two entrees and four appetizers, then go right ahead and get them. If you can't decide which dessert you want, get them both. There is no additional cost. It's the perfect time to try something new. If you don't like it, that's ok. If you love it, then get another!

We headed back up on deck to see the fireworks. Another Disney difference. Disney has the only cruise line that has fireworks at sea. After the display, we watched Club Pirate, the dance party for all ages, from one of the upper decks. Susie and I were exhausted by this time and we were gonna have to miss the showing of Pirates of the Caribbean:At World's End on the ship's giant Funnel Vision screen. We left the guys to their fun which included smoking cigars on the back of the ship. When we returned to the stateroom, we found yet another gift! This time it was a book all about the building of the Dream. Another piece of memorabilia to cherish.

It was difficult to get up the next morning and head to the Conference knowing we were about to arrive at Castaway Cay. No one wanted to spend previous beach time sitting inside a theater! But Disney knew that. So they planned only one speaker and then a special presentation, all to be concluded by 11:00am.We had all been wondering about the special presentation. Who could it be?? When they began the introduction, I recalled the last time that Disney completely shocked me with the entertainment they asked to perform for us. The last time I started to tear up before they ever even said who it was. Because once again, I guessed who it was before they ever said the name. And once again, I wasn't disappointed. Ariel. The Little Mermaid herself, was there to sing for us. Jodi Benson and, her accompanist, and a grand piano rose out of the floor of the Walt Disney Theater stage to thunderous applause. We sat in awe as she performed "A Dream is a Wish Your Heart Makes", "When You Wish Upon a Star", "Colors of the Wind", and of course "Part of Your World". She told us stories of how she got the role of Ariel and later went up against her friend Paige O'Hara for the role of Belle. I wish I could have captured this amazing performance on video or even with a photo, but we were strictly forbidden from doing so. It will just have to live in my memory and my heart.

At Conference end, I quickly got my bathing suit on so I could meet Dan, Paul, and Susie out at Serenity Bay, the adults-only beach on Castaway Cay. Susie had found herself a hammock and was lazily swaying in the breeze reading a book while the guys lounged in beach chairs. The beach waiter had just arrived with their first round of Conch Coolers. We saved our $50 stateroom credit for exactly this! I ordered my Captain's Mai Tai and let Castaway Cay work its magic. We ate lunch at Cookies Too BBQ where they served burgers, hot dogs, steak, chicken, mahi-mahi, fruit, cookies, and soft-serve ice cream. Paul got a massage in one of the Serenity Bay massage cabanas. We had a perfect day of exploring the sea floor for shells, sand dollars, and soaking up the precious rays of sun.

Days on Castaway Cay are never long enough. Ever.

We reluctantly made our way back to the ship. We kept a few shells in the hopes that we can make a necklace for each of us to remember this paradise and keep a small piece of it with us.

I sat out on our stateroom's verandah and soaked up my last views of paradise. I had my iPod with me so I stood by the railing and listened to the song that always reminds me of the peace I find on Castaway Cay. It's called "Messeges" by Vangelis. I listened over and over again as waves crashed against the shore.

While Susie and I took turns showering and began to get ready for dinner, the guys decided it was time they rode the AquaDuck. They came back to the room with big smiles on their faces so they must have enjoyed it!

We began the evening by seeing "Believe" in the Walt Disney Theater. We were running behind so we missed the first 20 minutes. But what we did see was fantastic! Tinkerbell's pixie dust effects through the walls of the entire theater at the end of the show made me gasp.

We breifly returned to our stateroom. We tried to step out on the verandah but we found that we had sailied into a thunderstorm! The rain and sea water sprayed our deck so we quickly ducked back inside and watched the lightning spiderweb across the sky. The ship was moving just a tad more than usual due to the storm, but hardly enough to even mention.

I had yet to see the nightclubs and lounges onboard the Dream so we decided to go to Skyline for a drink. This lounge has warm wood walls and a digital fireplace. But the main feature is the tall windows behind the bar showing the skylines of several major cities around the world. And they aren't just photos of the cities. You can see cars driving through the streets and airplanes flying through the air. The city view you see will change with the drink you order! Drinks in the light up menu (yes..light up menu!) are grouped together under the different cities. It so neat!!

Susie and Paul

It was time to dine at the third and final restaurant in the rotational dining which is the Royal Palace. It is an elegant restaurant so we dressed up a bit. As we sat down to dinner, I thanked Paul and Susie for joining us on the cruise. It made it extra special to have them with us. Dinner was excellent as expected. Belle's french onion soup was wonderful!

We wandered the ship and visited the other lounges and nightclubs on the Dream including Skyline, a champagne bar called Pink, a dance club called Evolution, and a sports bar called 687. I was so reluctant to go to bed because I knew our time on the ship was soon coming to a close. I didn't want to waste those precious hours sleeping, but my body just didn't understand that.

Once again, I discovered a gift in our room. This time it was the cutest little vintage suitcase with travel stickers on it for Nassau and Castaway Cay. Inside was a chocolate model of the Dream! That mini suitcase now sits on my desk at work next to one of the commemorative champage glasses from the Sail Away Party. When people ask me about that chocolate ship and cute little suitcase, I tell them about my experience on the Dream and that they just shouldn't miss an opportunity to have a Dream experience of their very own.

Again this year, I was asked to make the Christmas card that would be from all the ladies in our office to our boss, Sara. It is always an honor to make something that represents several people so I put alot of time into this one. And honestly, I absolutely love how it turned out! The ladies were very complimentary as the card was passed around to be signed. When Sara opened it, she was so pleased that she said she planned to frame it and keep it as one of her holiday decorations for years to come. I am very flattered.

Daily Window Designer Challenge

My friend Susan Stringfellow posted a Daily Window Designer Challenge on her blog several days ago. I didn't look at it very closely at first because contests just aren't my thing. I'm not good at putting myself out there to be judged by others. Eventually I decided to step out of my comfort zone and give it a whirl.

The idea was to create a 5 3/8 X 7 7/8 piece that would fit into the Daily Window Bag. From Susan's blog: "Members of the I Love To Inspire website can create a personalized card that will fit into the window slot of a Daily Window Bag then print it out and personalize their bag.The artwork that wins in this challenge will be featured in the I Love To Inspire Artists Gallery, on the Daily Window website and the Daily Window blog."

I've submitted my two pieces so there's no turning back now!

Christmastime at Walt Disney World is always an extraordinarily magical time. I've really enjoyed visiting the different Disney resorts to see how they take their theme and incorporate it into their holiday decorations. The most popular resort to visit strictly for its elaborate seasonal display is Disney's Grand Floridian Resort & Spa. In the resorts Victorian-style lobby, the Disney pastry chefs have built an enormous gingerbread house! Inside is a gingerbread bake shop where you can purchase gingerbread houses to take home. They also sell gingerbread shingles to nibble on that are exactly like the ones used on the roof.

This is a video from the Disney Parks YouTube Channel showing how to create your own gingerbread house. It also features a time-lapse video of the 3-day construction of the sweetest little cottage at Walt Disney World!

Another example of what can happen when you start messing around with PhotoShop! Quite honestly, the only thing that was altered in this photo was the color of the sky. All I did was change it from a pretty blue sky to a dark foreboding color. In doing that, somehow the photo took on an ethereal look. As if it was a painting instead of a photograph. And I LOVE IT!!!

I found this fantastic video on YouTube showcasing the amazing work of the Disney Imagineers and their conceptual drawings for the Haunted Mansion. It takes you through the attraction from beginning to end. Complete with crystal clear audio of the Ghost Host's narration, a quote from Walt Disney himself, and digital animation of some of the Mansion's visual effects, this video is fascinating for anyone who finds this Disney attraction to be delightfully unlivable!

This resort is a Deluxe Disney resort located near Disney's Animal Kingdom. Nearby is Disney's Animal Kingdom Villas.

Jambo House is the original building of Disney’s Animal Kingdom Lodge. In 2007, some of the guest rooms were converted into 216 villas for Disney’s Animal Kingdom Villas. There are still over 950 guest rooms in the Jambo House as part of Disney’s Animal Kingdom Lodge.

Kidani Village is a new building; separate from Jambo House, with its own front desk for check-in and additional amenities. Kidani Village has 492 villas for nightly rentals.

Guests at either Jambo House or Kidani Village can enjoy all of the services and amenities of the other. It is a ½ mile walk between the two.

What makes Disney's Animal Kingdom Lodge different from any other property is the amazing savannah views! This about as close as you can get to an African wildlife reserve lodge as you can possibly get without actually traveling to Africa. Jambo House offers several room types including standard (with views of rooftops or parking areas), pool view (with views of the pool or flamingo pond), and the amazing savannah view rooms.

Choosing a savannah view room will give you views of one of Jambo House's three savannahs: Arusha, Sunset, or Uzima. Choosing an Arusha view room will give you the ideal view of the Arusha savannah which is the central savannah enveloped by the arms of Jambo House. I am specifically focusing on savannah view and Arusha view rooms here since they are clearly what sets this resort apart.

When I checked into my room on the Kudu Trail arm of Jambo House, I found a Wildlife Field Guide. It gave a detailed explanation of the animals I could be seeing from my balcony including giraffe, impala, kudu, and zebra. The animals live on the savannah and sleep there too, although they are often hidden during nighttime hours.

Each savannah closes for 2 hours for cleaning and maintenance every day. Only one savannah closes at a time so there are at least two savannahs open at all times. Part of this process includes maintaining feeding areas that draw the animals into easy view. Before I arrived, I found myself wondering if I would encounter unpleasant animal smells from my balcony. But that was never an issue.

My arrival at the resort timed perfectly with a complete downpour! I stepped out on to my balcony to find the savannah fairly empty except for three zebra. They stood in the rain with their heads down and waited out the brief shower. The following morning, I watched as two crowned cranes appeared to play a game of Tag while the horticulturists performed their 2 hour maintenance. When I came back from breakfast at the Mara, the savannah was abuzz with wildlife. I enjoyed watching the giraffe walk gracefully across the grass while the zebra munched on breakfast.

The big consideration when choosing a savannah view room would be how much of your vacation would you spend sitting on that balcony. I would recommend Disney's Animal Kingdom Lodge for guests who are return visitors to Walt Disney World staying on property for at least a week. This gives you plenty of time to sit on your balcony and really enjoy these animals while still having time to have fun in the Disney Parks. While the resort is very close to Disney's Animal Kingdom, it is quite removed from the Magic Kingdom, Epcot, and Disney's Hollywood Studios. This quiet seclusion from could be a positive for some guests and a negative for others.

I would also recommend these rooms for photographers who would like to get some incredible wildlife shots. While Kilimanjaro Safari at Disney's Animal Kingdom theme park can give you such an opportunity, photographers know that patience is truly key in getting the perfect wildlife shot and a theme park attraction just doesn't give you that luxury. Be sure to bring your binoculars and tripod. Sit back with your morning coffee and watch the wonders of Africa pass by your lens!

Today was the day for some Halloween treats for the adults! And the Sweet Retreat Cupcake Boutique was the prefect place to find something tasty for that mid-afternoon snack. I put this bag of goodies together for my friend (and boss), Sara. Together, we savored the the 'smores cupcake and enjoyed each delectable bite. The bag itself was fun to put together for her. We both have a fondness for Halloween so it was fun to give her a little treat bag filled with delicious goodness!

What is YOUR Ghost Story?

When I was a little girl, my grandmother told me of her encounter with the Lady in White. We were at her neighbor's house at the time. They were out of town and we stopped in to water their plants for them. Grandma began to tell me the story of an evening when she was babysitting for this family. She had put the kids to bed and sat down on the couch to watch TV. The front door opened and a lady in white came floating through the door. She drifted past Grandma through the living room and down the hallway, out of view. The faucet in the bathroom then turned on full blast and started spewing water into the sink.

Quivering in my shoes, I asked, "What did you do, Grandma?!”

She calmly looked at me and said,” Got up, turned off the bathroom faucet, closed the front door, sat back down on the couch, and started watching TV again."

"You weren't scared?!?!"

"No."

Well I was scared!! I immediately proceeded to hightail it out of that house and went running back to Grandma's.

Since then, real ghost stories have fascinated me. I have visited a few of the most haunted locations in the United States including The Stanley Hotel in Estes Park, Colorado and Alcatraz in San Francisco, California to see if maybe I would have my own ghostly encounter. The most memorable is the story I’m about to tell. My ghost story.

The RMS Queen Mary
Long Beach, California

This was my only true attempt to find a ghost. We stayed on the Queen Mary just for 1 night during our Southern California vacation in 2005. We spent the day taking tours and learning about the history of this amazing ship. From her royal passengers, her service during World War II, and her transformation to a Long Beach Hotel we came to have a great respect for this beautiful lady.

We also learned about the paranormal experiences people have had in various locations around the ship. The First Class Pool is reportedly the most haunted location on the ship. A young girl is heard laughing and seen carrying her teddy bear. Women in period bathing suites are seen walking the pool deck. Wet footprints are found on the floor… but there is no water in the pool! While taking photos, I caught this strange light anomaly in the upper right corner. I cannot claim it to be paranormal in any way, but I think it’s kinda weird!!

It is reported that there is a vortex in the women’s changing room, just off the First Class Pool. A vortex is described as a momentary doorway or portal to another realm that allows entities and other paranormal phenomena to come into our world. Our tour guide, Valerie, asked us to put our hand into the invisible vortex and see of we felt anything unusual. Most people held their hand out for a few seconds and walked away. I held my hand there for about a minute. About 30 seconds in, my hand began to feel like it had fallen asleep.

Down in the engine room in an area called Shaft Alley, a young man was killed during a routine drill. Some foolish crew members were playing around by jumping through the water tight doors as they were closing for the drill. One man was crushed to death in water tight door #13. He is said to walk Shaft Alley and disappear at water tight door #13.

When going from one area of the ship to another, we ran into Valerie again. We started chatting and she asked us if we were actually staying on the ship that night. When we said yes, she shook her head. She said she would never stay onboard the Queen Mary. Ever. Someone who worked on the ship and did ghost tours every single day would never spend the night there. I found that very telling.

A self-guided tour of the ship is provided to all guests. So Dan and I decided to do the tour late at night, hoping to find some paranormal activity. We weren't able to visit Shaft Alley or the First Class Swimming Pool that late at night, but there were other areas with ghostly activity we could investigate.

While we saw nothing unusual, I can say I had a personal experience that chilled me to the bone. We were on the bridge of the ship at about 10:30pm, each doing our own exploring but near each other at all times. I had just snapped a few pictures when I turned to say something to Dan and found no one there. I called his name but he didn't answer. I started to wander around looking for him. I was just outside the door to the bridge when I felt terror invade me. It could have just been my own mind. I honestly cannot claim it to be anything paranormal. But it washed over me so fast. I was incredibly uncomfortable and I don't think I had ever been so scared in my entire life. I have no explanation for it. I immediately moved on and eventually found Dan. He wasn't far away at all but says he never heard me calling for him.

The Ghost Hunters TAPS team visited the Queen Mary and did their own paranormal investigation. While their experience was disappointing, I enjoyed watching the investigation. And even seeing our tour guide, Valerie be a part of the show!

Father Christmas ~ Epcot Holiday Storytellers Part #4

I am ridiculously excited about finishing this layout!! Why? Because Photoshop helped me solve the major color problem that I had with these photos. Father Christmas's cloak is actually a crazy teal color that I couldn't match to any patterned paper. Christmas-themed or otherwise. While it looked lovely in real life, it made scrapping the photos quite a challenge. I spent quite a bit of money buying papers that I thought would match. But I was never successful.

I've had Photoshop for years but until recently, I didn't have a computer that could handle such a large program. I was finally able to install it and have been playing around to figure out all the amazing things it can do. The other night, I stumbled upon the steps needed to change the color of something in a photo. I immediately pulled up these photos and changed the color of Father Christmas's cloak to match the colors in Basic Grey's new Jovial line.

Finally, success!!

Father Christmas of the United Kingdom is very proud of the traditions that began in this island country. Many traditional Christmas carols originated in the UK as well as the practice of caroling by standing on street corners and singing the hymns. The first commercial Christmas card was designed and printed in London in 1843. When a kiss was claimed under the mistletoe by a young man of the ancient Druids, he would pluck a berry from the bough to get another kiss. And a berry and a kiss. And a berry and a kiss.
Until all the berries were gone.

Happy Birthday, Sonni!

My dearest friend has been going through some pretty tough times. Some people in her life have treated her unfairly, creating major life changes that have caused great heartache for her. Those close to her have stood by her and we are doing our best to lift her up and make her smile as often as we possibly can. I tried to do that with this card. I saw this quote on Facebook several months back and have been waiting to use it on Sonni's birthday card. I am proud to say that it got a smile and even a laugh.

Hang in there, Sonni. You will get through this. I love you!!

Not All Who Wander Are Lost

I've always had trouble with creating scrapbook pages that had a masculine feel to them. Going on a motorcycle trip with 5 men made me realize that I'd better figure it out pretty quickly if I'm going to scrap any of those photos. So, I turned to Tim Holtz. I've watched some of his online demos and found myself getting really excited about inking, crackle paint, and grungeboard. I promptly went out and spent way too much money on several Tim Holtz products! Paired with the DCWV Designer Blue Jeans Stack, I think I've found a winning combination of masculine products.

This layout has alot of Paul in it. He always wears jeans. Often, they are frayed and ripped. The silver foil in the papers reflects the silver on his bike, Pearl. The wings portray the freedom he feels when he is riding. And most importantly, the title is one of his favorite phrases

This photo was taken by one of the professional photographers of Killboy.com. They sit in strategic places along the side of US129 at the Tail of the Dragon (<---- click here to see the map of the Dragon... and to begin questioning our sanity!). Their high speed cameras snapping literally thousands of photos every single day of the cars and motorcycles driving by, enjoying the twists and turns of the Dragon. Riders can then go to their website, find their photos, and purchase those that they like best. This was my favorite shot of Pearl, Paul, and I. We are all very grateful to Killboy for getting these shots that would be next to impossible for us to achieve. Thanks for capturing our memories for us!

On The Boardwalk

Sometimes just the right paper comes along. I may have to wait awhile, but eventually it appears. I see it on the shelf at the scrapbook store. Out of the hundreds of photos I have sitting there waiting to be scrapped, that perfect photo pops into my head to match that perfect paper. It's serendipitous! Graphic 45's On The Boardwalk collection didn't really need a serendipitous moment for me to think of this photo. I mean, this is Disney's Boardwalk Inn Resort. Pretty darned obvious! But I still had that "Aha!!" moment and snatched up the papers, eager to get home and see what I could create.

My Favorite Smiles

In today's world, some might try to measure friendship by how many friends they have on Facebook or how many follow them on Twitter. How many people follow their blog or how many contacts they have in their iPhone. Which is truly ridiculous. True friends are the ones that are there in the best of times and the worst of times. They may not be on Facebook or even know you have a blog. Because they would much prefer to be with you. To hear your voice on the phone, see your smile as you chat over a drink, or just sit next to you quietly as you watch a movie together. They know YOU.

These two people have been my rock-solid support system. They've made me laugh hysterically and they've held me when I cried uncontrollably. I get giddy when I know the three of us are going to be together. Paul will tease Sonni. Sonni will tease Paul. They will team up and tease me. I never get tired of spending time with them. The sounds of their laughter feed my soul. And the sight of their smiles makes me realize how very blessed I am to have them in my life.

I love you guys. So much.

Laurie's Chicken Nachos

I decided that I will also include some of my own recipes in my album. One that others ask me for. Although, there certainly aren't many of those. I usually do the asking and I'm not the one who is asked! This is the one I get asked about the most. And I can honestly say that it is my own personal creation from beginning to end. I even bought the serving tray and dish in Cancun seen in the photo specificly for my chicken nachos. Enjoy!

Chicken Nachos
From the kitchen of Laurie Zeller

1 rotisserie chicken, pulled apart into bite-size pieces

(preferrably the Archer Farms Southwest seasoned chicken from Target)
1 1.25oz packet of taco seasoning
shredded colby jack cheese
2 chorizo sausages

3 jalapeño peppers, diced

1/2 medium onion, diced

1 large clove garlic, minced

2 1/2 cups chicken broth

1 jar of Tostitos Monterey Jack Queso

sour cream
green onions

salsa
tortilla chips

Heat oven to 300°. Take sausages out of casings and brown with onion. Add diced jalapeños and continue to sauté 3-5 minutes. Add pulled chicken, broth, and taco seasoning. If you have drippings from the chicken, add those too. Simmer uncovered until the broth is almost completely gone, stirring occasionally. Place chicken mixture on oven-safe serving plate and top with queso and shredded cheese. Heat in the oven until cheese is melted. Serve with sour cream, green onions, salsa, and tortilla chips.

Happy 100th Birthday, Split Rock Lighthouse!

Today is the 100th birthday of the Split Rock Lighthouse. Until she was deactivated in 1969 due to a change in shipping lanes, she guided many a ship safely along the rugged and dangerous north shore of Lake Superior. Normally, she is lit only once a year, November 10, in solemn memory of the souls lost on board the Edmund Fitzgerald in 1975. But tonight she will shine in glorious celebration of the first night that her beacon shone brightly across the churning waters of Superior.

It is because of Split Rock and my numerous visits there growing up, that I have such a passion for lighthouses. But she will always be my favorite. My heart wishes I was there tonight. To see her in all her glory. To wish her a very happy birthday. She is a beautiful lady who is very dear to my heart.

The Epcot Kissing Passport

Awhile back, I was chatting online with some of my Disney scrapping pals and someone asked if anyone had any traditions that they follow in each country of Epcot's World Showcase. One person's response was getting a photo of them giving their honey a kiss in each country. I thought that was such a sweet idea!

Soon after, I came up with the idea of creating an Epcot Kissing Passport. It took a long time to come to a reality but I finally did it! This is going to be a gift to my Walt Disney World honeymoon and wedding anniversary clients. I hope they really get into the spirit and have fun with it.

There is a spot for them to put the photo of the happy couple kissing. There is also a space for the couple to actually get their passport stamped at the KidCot Fun Stops located in each pavilion.

The other day I was digging through my pile of recipes that I've gotten from friends over the years. You know. The ones we all end up with as a result of tasting something that was just scrumptious. You turned to your friend and said, "WOW!! This is SO good!! Can I get the recipe?". I couldn't find the recipe I was looking for and chastised myself for not doing a better job of organizing these little treasures. Hmmmmm.....what could I do....??

Scrapbook them, silly!!

The album itself is a work in progress but I've already decided that it will be titled, "WOW!! This is SO good!! Can I get the recipe?". I'm not great with titles but this one made me laugh. I think it's perfect!

I've got one recipe page done and hope to get myself into the kitchen to cook up some of these other delicacies. I will of course, post the recipe itself to share with you. Isn't that what you should do with great recipes?

Linda's Banana Bread

1 cup sugar

2 eggs

4 TBSP sour milk*

1 cup mashed bananas

1 tsp baking soda

1/2 cup butter

1/2 tsp salt

2 cups flour

1/2 cup chocolate chips

1/2 cup walnuts

Beat eggs, sugar, sour milk, and mashed bananas together. Add butter. In a separate bowl combine the remaining ingredients. Slowly add in to the wet ingredients and mix well. Bake at 350° in a glass bread pan coated with cooking spray for 45 minutes to an hour. Test by placing a knife into the center of the bread. If it comes out clean, the bread is done.

*sour milk: 1 cup milk & 1 TBSP vinegar. Stir and let sit while assembling the other ingredients.

3,200 miles in 4 1/2 days.

Yes, really. And it was fantastic!

This new line from Little Yellow Bicycle just couldn't be more perfect for helping me to document this trip. I immediately gravitated to the map of the country so I could mark the route we took from Bloomington, Minnesota to Franklin, North Carolina. Dan and I enjoyed sitting down and discussing our top 10 memories from the trip. So many to choose from that it was hard to narrow it down to just 10. Obviously an indication of how much fun we had.

Bridal Veil Falls

We recently returned from an intense 4 1/2 day road trip from Minnesota to the Smoky Mountains of North Carolina and Tennessee. Between car and motorcycle, it's estimated that we drove over 3200 miles in that short time span. As grueling as it was, we had an incredible time! We saw some amazing scenery, bonded with some good friends, and enjoyed some real Southern hospitality.

Bridal Veil Falls is a 45-foot waterfall located in the Nantahala National Forest northwest of Highlands, North Carolina. With a short curve of roadway located behind the falls, it has the distinction of being the only waterfall in the state that one can drive a vehicle under. (From Wikipedia)

May is the month to celebrate Moms! And it's the month to celebrate my Mom twice, since her birthday falls in the month of May too. I love spending extra time and effort in project I create for my Mom because I know she will really take the time to look at it. To study it. All of my creative abilities sprouted from her. I know she appreciates every little detail so I go the extra mile to make sure everyting is just as it should be. Because she has always gone the extra mile for me.

The stork visited my dear friend, Jen and her husband Juan this past December. And when he did, he brought two beautiful babies with him! God knew that a baby would be so adored in that home that it would take two babies just to soak it all up! William and Lilliana are just the cutest little things. I finally got to meet them the other day. They are truly heaven sent.

This is a chipboard album I gave to Jen as a gift to welcome her bundles of joy into the world. I made a Disney chipboard album in 2008 and pretty much adapted and simplified that using the Basic Grey Sugar Rush collection.

So Congratulations, Jen! I am ridiculously happy for you!!

Pixie Hollow Fairy Garden

Another layout featuring some of the beautiful flowers and topiaries at the Epcot Flower & Garden Festival. I have often wished that I had a backyard that favored beautiful flowering plants that I could cherish in the spring and summer. It would be such fun to step out my back door and pick fresh flowers to brighten my home. Maybe even find a perfect little pixie amongst the blossoms.

Nature's Beauty

Minnie's Butterfly Garden was one of our first stops during our first visit to the Epcot Flower and Garden Festival. Gorgeous butterflies of varying species flew around our heads as caterpillars munched on the landscaping. I found it next to impossible to get photos of the butterflies because they never seemed to sit still long enough. They were constantly moving, on the hunt for the sweet flower nectar they craved. I would aim my camera and they would flutter off to the next flower on their quest.

This layout was done using a sketch by Susan Stringfellow on her Sketch Savvy blog. I am addicted to her sketches!! These sketches are a life saver for a busy woman who sometimes just looks at her piles of paper and pictures and frankly doesn't know where to begin. Thanks for continuing to give me that much needed first step, Susan!

Another birthday! This time for my dear friend, Kelly. She is always so much fun to chat with. She shares my love of Disney and we love to dream about our next WDW vacation... and which restaurants we will eat at!

Leslie is a new friend that I had the pleasure of traveling with on my recent trip to Mexico. She was a wonderful roommate and adorably sweet. I was blessed to share this trip with her and to now be able to call her friend.

A Travel Agent's Thank You to Her Disney Clients

I have often said that I would be a happy girl if I could spend my working days booking Disney Vacations all day long. It's what I truly love to do. While that hasn't happened quite yet, things definately seem to be heading in that direction. I find myself with many more Disney clients than I've ever had in the past and I'm just thrilled about it.

Booking travel online has become so common. People don't use travel agents like they used to. My industry is suffering. But it's interesting to watch a client's body language change when they sit down and tell me of how overwhelmed they are about researching their Disney vacation online. As I talk to them about their options and explain things in simple terms, their shoulders relax. As I offer to take care of their flights, their accommodations, theme park tickets, transportation, and dining reservations I watch as relief spreads across their face. They seem to understand that I am there to help. To answer their questions honestly instead of leaving them to drown in a sea of online information...some accurate and some, not so much. I am grateful when my clients trust me with their vacation. Because that allows me to do what I love.

I came up with these small tokens of thanks to those who have trusted me to create a fabulous Disney vacation for their family. Something to help the memories of their magical vacation stay fresh in their minds. And to help them dream of another vacation sometime down the road when I hope they will call me again.

Disney's EarMarked Conference 2009

Disney's EarMarked Conference is an event that I enjoyed immensely in 2008. I was eager to attend the 2009 Conference which would take place at Walt Disney World November 18-20. While the event had us involved in several break out sessions talking about things like sales and marketing, I was once again amazed at the wonderful activities they planned for us.

Nov 17: Sara and I arrived the day before the Conference began. We wanted to have a little fun before we got busy with meetings. Disney's Yacht Club Resort was to be our home which I was very excited about since I hadn't stayed there before. Every time I had tried to get a reservation there in the past, it was full! The room was elegantly decorated with a nautical theme. It offered a beautiful view of Crescent Lake, the Yacht Club Lighthouse, and Disney's Beach Club Resort.

Our friend and Disney sales representative, Frank, made dinner reservations for us at Artist Point (Signature restaurant - 2 table service credits on the Disney Dining Plan) at Disney's Wilderness Lodge. Sara and I got to the Lodge pretty early. We were just starving! So we went to the Territory Lounge, ordered a drink, and ordered the chili nachos which we promptly inhaled. Frank and his friend, Holly soon joined us and we moved to the restaurant. I had dined at Artist Point a couple times before, but this meal was one I will never forget. We started off by sharing the venison pot stickers, braised penn cove mussels, a selection of artisan cheeses, and and a bottle of wine. I am not a fan of seafood so it took some serious peer pressure to try a mussel. After choking down the slimy booger, I vowed not to give in to peer pressure again. However, the pot stickers, the cheeses, and the wine were just delicious. We all ordered something different for dinner and shared our portions so that we could get a taste of everything. The grilled buffalo striploin, seared day boat scallops (which I skipped!), wild boar tenderloin, and Artist Point's signature cedar plank salmon were all complimented with a glass of whichever wine was recommended for each entree. Simply fantastic!! Wow, what a meal. I truly have no idea where I put all that food. We were all stuffed to the point of being incredibly uncomfortable. But it was absolutely worth it!

When we were finally able to roll ourselves out of Artist Point, we decided to drive over to the California Grill Lounge perched atop Disney's Contemporary Resort. There is an outdoor area (for California Grill patrons only) with amazing unobstructed views of the Magic Kingdom, the Seven Seas Lagoon. I had heard this spot existed but this was my first experience at enjoying this breathtaking view. I bet watching the fireworks from this vantage point would just be stunning! We went back inside and sipped cocktails while still taking in the scenery out the windows. We talked and laughed until the restaurant/lounge closed. Holly was kind enough to drive us back to the Yacht Club where Sara and I collapsed with full tummys and smiles on our faces.

Nov 18: We started off our morning with a character breakfast at Cape May Cafe (1 table service credit on the Disney Dining Plan) at Disney's Beach Club Resort. We weren't particularly hungry but thought we should get some nourishment to start our day. And of course, seeing the characters is always the very best way to begin a day at Walt Disney World!

One of my favorite things about Disney's Yacht & Beach Club Resorts is their backdoor entrance into Epcot's World Showcase. I love being able to just walk into Epcot from my resort!

I did my usual perfume shopping in France. We joked around in Morocco and Sara played dress-up with some of the traditional clothing. Photos were taken with a few characters. We quickly browsed through Japan, USA, and Italy. We didn't have much time since our first general session for the Conference was to begin at 1:30pm. There just isn't enough time when you're in Epcot!

The EarMarked Conference just wouldn't be the same without our "fairy of ceremonies", Iwanna Dream. She was back again this year and had us all laughing immediately.

As the general session ended, we were reminded that that day was actually the birthday of a very special mouse. Minnie Mouse promptly joined us and asked us all to sing to Mickey when he called him into the room. It was a rousing chorus of Happy Birthday when Mickey walked in the door. He sure didn't look 81 years old! Must get that mouse's beauty secrets. We all received Mickey ears, cupcakes, and ice cream to celebrate.

We split up into special activities that we signed up for individually, ranging from hotel site inspections to a Disney golf experience. I chose to visit the Disney Event Group to find out more about the creative ways they can help guests celebrate a special event while at Walt Disney World. We each got to make our very own fresh floral arrangement with their guidance. This was alot of fun!!

Our itinerary told us that it was time for a "Special Evening Event Dinner". Sara and I were joined by Mitzi, one of our outside agents. We boarded buses bound for Disney's Hollywood Studios which was now closed to the public for the day. We were driven to a backstage area and dropped off at the Lights, Motors, Action Extreme Stunt Show Stage. This area is normally filled with speeding cars and motorcycles performing amazing stunts for a captive audience. But now it was covered with dining tables, chairs, buffet tables, and open bars. A DJ was playing toe-tapping-tunes and those who weren't eating were dancing. The food was just succulent!! But then, that was no surprise. This was Walt Disney World!

After dinner we were guided over the the Streets of America and our own private viewing of the Osborne Family Spectacle of Dancing Lights.

Off to Pixar Place and a private after-dinner drink, coffee, and dessert reception. Several dessert-laden tables lined Pixar Place. Everyone was having such a wonderful time. Toy Story Mania was open for us and we decided to partake!

All good things must end and our evening at the Studios came to a close. Sara and I decided that we needed a little hot tub time. We sat in the warm bubbly water and spent some time getting to know each other better. It was a great way to wind down after a really fun day!

Nov 19: Today was going to be a long day filled with multiple break-out and general sessions. We were served scrumptious buffet selections for breakfast, lunch, and snack time. Drawings were done during the general sessions and prizes were awarded. We all learned alot, but let's face it, no one likes to sit in meetings all day. So it was off to Mickey's Very Merry Christmas Party to shake off those doldrums.

First, Sara, Mitzi, and I had dinner reservations at the Kona Cafe (1 table service credit on the Disney Dining Plan) at Disney's Polynesian Resort. This wonderful place is often overshadowed by its neighbor, 'Ohana. But don't be to quick to write this restaurant off. You won't be disappointed if you dine there. It's a great option when alot of the other area resorts are booked with those having dinner before a party at the Magic Kingdom. I now have a new WDW food to crave: The Kona Cafe's warm sweet bread and macadamia nut butter!! (<----recipe) The three of us devoured a 10oz loaf of bread slathered in nut butter and requested more before we ever even got our meal. My entree was the pomegranate barbecued pork chop and it was just delicious! Mitzi had the coconut almond chicken. She let us all taste a bite and it was an amazing blend of flavors.

We took our happy tummys to the monorail and headed for the party. I've attended Mickey's Very Merry Christmas Party many times and it is always such a special treat. We walked in just as the Once Upon a Christmastime parade was winding down Main Street U.S.A. I just adore the tin soldiers!

The Holiday Wishes fireworks soon followed.

Then it was off to enjoy some of our favorite Magic Kingdom attractions and meet and greet some real characters.

At one point is was eating a Dole Whip while floating through Pirates of the Caribbean and the thought occurred to me that it just doesn't get much better than this! We had a fantastic time. Yet another exhausting yet amazing day drew to a close as we rode the bus back to the Yacht Club later that night. Content as we could be.

Nov 20: A few more meetings today. Breakfast, lunch and snack buffets. More general sessions and prizes awarded.

Our closing general session featured special guest Paitoon Ratan, a Walt Disney visual affects artist and animator. His credits include Aladdin, The Lion King, Pocahontas, The Hunchback of Notre Dame, Mulan, Tarzan, The Emperor's New Groove, Lilo and Stitch, and Brother Bear. He was interviewed by Iwanna Dream so it was quite entertaining! It was fascinating to listen to Paitoon Ratan speak of his work. He was clearly so very proud of all the little details. He shared little animator secrets put into the movies. In the Hunchback of Notre Dame, look closely at the arial view of Paris buildings surrounding Notre Dame and you'll see that one has a satellite dish. There's a hidden Mickey in the berries the raccoon is eating in Pocahontas. One of the bears catching fish in Brother Bear ends up catching Nemo. In Mulan's matchmaker scene, the two men playing checkers are modeled after two former Disney animators. In that same scene, Mulan helps a young girl retrieve her doll from a boy. The doll's face is modeled after Paitoon himself when he was a baby! So interesting.

At the end of the presentation, we were presented with an exclusive 2009 EarMarked Conference print made by Paitoon. The main feature of the print was a tree referencing how our dreams can grow. How Walt Disney's dreams began under a cottonwood tree on his family farm in Marceline, Missouri and grew into a stunning success. We were each given a packet of cottonwood seeds from that very tree that Walt called his Dreaming Tree. And once again, I found myself in tears. Overcome by the emotion that Disney always seems to touch in me. I will cherish that print and those seeds forever.

Pulling myself together, I made my way out of the general session with the crowd. We had one more special activity to close out the Conference. I signed up for Pluto's Pursuit which is a scavenger hunt through Disney's Hollywood Studios originally created for Disney cast members as a team building experience. It is exclusive to the Disney Institute business training programs. It was a blast!! Multiple teams of 4-5 people were sent through the park looking for answers to trivia questions. There were brain teasers, riddles, and puzzles to solve. We scoured areas of the parks looking for the tiniest details that most park goers would never ever see. Disney is certainly in the details! A solid second place finish for my team awarded us a Pluto's Pursuit pin and small prize.

The Conference was now officially over. Yet another fantastic experience. Sara and I had planned to top off our trip with dinner at Yachtsman Steakhouse at Disney's Yacht Club Resort. For years I had heard ravings about this restaurant but had never had the pleasure of enjoying it myself. It was fantastic!! I had the Yachtsman filet mignon which simply melted in my mouth. Although this dish comes with mashed potatoes, I asked to substitute them for the potato gratin with diamond white cheddar instead. Accompanied by the recommended wine to compliment the meal, this was incredible culinary delight. This Signature restaurant is fairly pricey (2 table service credits on the Disney Dining Plan) but absolutely worth every penny.

When we returned to our rooms, we found that we had each received a small cut-glass set of Mickey ears to keep on our desks back at home. One one ear it says, "Authorized Disney Vacation Planner" which is a designation given only to those who are designated EarMarked by Disney. And only to those who are fortunate enough to attend amazing events like this.

The Back Side of Water

Ahhhhh.... the Jungle Cruise. According to Wikipedia, "The original intent of the ride was to provide a realistic, believable voyage through the world's jungles. The original spiel had no jokes and sounded much like the narration of a nature documentary."

Things have changed a little over the years!

Today this attraction is all about the bad jokes. Here are just a few taken from the fan site, The World Famous Jungle Cruise ...

"We're now entering the rain forest. Feel that mist on your face? Kind of cool... kind of nice? It's interesting to note that that mist carries the world's largest array of rare tropical bacteria. It's just one of those extras we provide for you on the Jungle Cruise."

"Over on the left we see some beautiful butterflies. Did you know that these butterflies can have a wingspan anywhere from 12 inches all the way up to one foot?"

"This is the sacred Indian elephant pool - a sight never seen by civilized man.
And as I look around the boat today, I can see that you folks are no exception."

(Referring to a gorilla) "Now please, if you are wearing yellow, don't make any noises like a banana. It drives them ape and they find it quite appealing."

"You know, I've heard that more water comes over Schweitzer Falls in one minute than a man can drink in his entire lifetime. I don't know about you, but I find that a little hard to swallow."

"We've just turned down the Nile river of Africa. If you don't believe me, you're probably in De-Nile."

"It's tough for the lions to split up a zebra... light meat, dark meat, light meat, dark meat, light meat, dark meat."

(Referring to the hippos) "Don't worry, folks. These fellows are harmless. They communicate that by the friendly way they wiggle their ears... Look out. He's going to charge the boat. (Shoots gun) Can you believe that? He acts like he's going to do one thing, then he does the opposite... what a hippo-crite!"

And my personal favorite! ~ (The river has wound around and brought us back to Schweitzer Falls. This time, though, out boat passed through the narrow space between the cascading water and the rocks.)"And now, the moment you've all been waiting for... the amazing... the colossal... the stupendous... the eighth wonder of the world... the back side of water!"

Shake That Thang!

Disney's EarMarked Conference 2009 at the Walt Disney World Resort was going to be an exciting time for me. Not only is the EarMarked Conference tons of fun all on its own, but this year I would be attending it with my new boss, Sara. We had only been working together for just over a month. During this trip we would be getting to know each other. And that proved to be very easy to do. We just could not have gotten along better! Our giggles of delight in seeing the characters, getting our photos taken with them, and exploring the parks instantly bonded us, not as employer and employee, but as two women who truly love the magic of Disney.

It was on a perfect day in Epcot when we wandered into a shop in the Morocco pavilion. Sara found a beaded headdress that closely matched the colors she was wearing. The shopkeeper then found a matching belly dancer's hip scarf and tied it around her waist. The outfit was complete! We laughed and laughed as she shook her hips making the metal coins on the scarf jingle. What a riot!

So here she is...my new boss!

This time for my Father and for my dear friend, Paul.

My Dad is truly one of the most intelligent people I know. His wisdom was always a great comfort to me growing up and continues to be such today. I cherish the memories I have fishing with him, walking the woods with him, ...... and getting very drunk on a cruise ship with him! My "brother" Paul has become a source of strength for me. He makes me laugh in good times, cheers me up in bad times (motorcycle rides sure help), and he's a pretty darn good cook too!

It's been a busy month for birthday cards!

Three dear friends of mine had birthdays all within 8 days of each other. Each one being very special and close to my heart. Mark for his selflessness, the way he cares for those around him, and his ability to make me blush while I'm laughing at his dirty mind. Susie for her sweet easy going nature, for the way she loves her family, and for her amazing margaritas! Tami for her sense of humor, her love of Disney, and her amazing talents as a scrapbooker.

Friends bring so much to our lives and I can honestly say that I'm blessed with some great ones. Happy birthday, guys!

My new kick is to put a small dangle on the end of the twine. I did it on my Christmas cards this past holiday and loved how it turned out. A 3-D interactive kinda thing. So I continued to do that with these 3 cards. I just punched a hole in a small chipboad piece or Cricut diecut using my Cropodile, threaded the twine through it and a button, and tied the twine at the back. A fun little touch!

Los Tres Reyes Magos ~ Epcot Holiday Storytellers Part #3

I'm trying to keep these layouts somewhat similar in design to reflect the connectivity of the Epcot Holiday Storyteller theme. That is a challenge in itself! I'm noticing that some of my pictures just didn't turn out the way I wanted. I also realized that I missed more storytellers than I originally thought. Oh well. I guess I'll just have to go back to WDW this December!

The gifts of Los Tres Reyes Magos, The Three Wise Men, are reflected in the story of the poinsettia that blooms all over Mexico during the festive holiday season. On Christmas Eve, a poor beggar boy walked to church in great sadness because he had no gift for the Holy Child. The boy gathered branches of green leaves from a bush by the side of the dusty road and took them to the church. The other children mocked his gift. All of a sudden, miracle of miracles, dazzling red star-shaped flowers appeared on the branches. With pride, the boy entered the church with his gift… from the heart.

It's my sister-in-law's birthday today! Actually, I just need to say sister. She's never been fond of the whole "in-law" tag. And frankly, I haven't either. She's a very dear person to me and I'm lucky to have her in my life.

She shares my love for the willy, nilly, silly old bear that dwells in the Hundred Acre Wood. So, when I saw the honeycomb layout in the February issue of Scrapbooks etc magazine, I was immediately inspired to make this card for her birthday.

Papa Noël ~ Epcot Holiday Storytellers Part #2

Oh Canada!

Papa Noël is one of the many Christmas traditions and beliefs that vary across the vast country of Canada. Some believe in Santa Claus. Others in Père Noël. The Inuit people of the Arctic believe in the mischievous Nalyuks who travel from house to house on Epiphany, January 6th. They bang their walking sticks on the ground and ask the children if they’ve been good. If they answer with a truthful heart, the Nalyuks give them special gifts. December 26th is Boxing Day, a Canadian tradition where thank you gifts are given to trades people and those in service. Most of the world’s Christmas trees are grown in Canada and of course, that’s where Santa Claus found the very best reindeer to pull his sleigh.

La Befana ~ Epcot Holiday Storytellers Part #1

Happy New Year 2010!!

Thought I fell off the face of the earth, didn't ya?

Yeah... me too.

It is my New Year's Resolution to put in a Herculean effort to get back into my scrap room and have some fun. So I decided to begin by getting to work on the photos I took in December of 2008 at Epcot of the fabulous Holiday Storytellers. You can go around World Showcase and learn about how each country celebrates the holiday season by listening to the storyteller's tales. So many different traditions and yet so many overlapping and blending together. Fascinating!

I began by scrapping my favorite country in World Showcase (and the one I am dying to visit someday!! With Adventures by Disney, of course) which is Italy. The journaling reads as follows...

La Befana was approached by the magi a few days before Christ's birth. They asked for directions to where the baby Jesus was but she did not know. She provided them with shelter for the night, as she was the best housekeeper in the village with the most pleasant home. They invited her to join them on the journey to find the baby Jesus, but she declined, stating she was too busy with her housework. Later, La Befana had a change of heart and tried to search out the magi and Jesus. That night she was not able to find them, so to this day, La Befana is searching for the baby Jesus. She leaves all the good children toys, figs, dates, honey while the bad children get coal or bags of ashes.

This day of ghosts and goblins is the day I'm paying homage to Disney's Haunted Mansion. My very favorite Disney theme park attraction just celebrated it's 40th birthday. The 999 happy haunts have spooked countless visitors beginning with the original Haunted Mansion at Disneyland which opened it's creeky-hinged doors on August 9, 1969. Master Gracey opened his other homes to visitors over the years including those at Walt Disney World's Magic Kingdom, Tokyo Disneyland, and the Phantom Manor at Disneyland Paris. All complete with wall to wall creeps and hot and cold running chills, of course!

Autumn Harvest

With Dan working nights, it's rare that he and I get time together on a sunny afternoon. But he decided to stay up "late" one day so we could spend it together enjoying the bounty of fall in Minnesota. We started our day at Apple Jack Orchards shopping their quaint little store and sharing a bowl of warm apple crisp with vanilla ice cream in their restaurant. So nummy!! We took pint containers and headed to the autumn raspberry patch. The bushes were bursting with bright red berries. The branches were heavy with them. Bees buzzed around from berry to berry tasting the juicy sweetness. The six pints of berries that we picked soon became homemade raspberry jam that we will be enjoying long into the cold days ahead.

This layout and the matching greeting cards were designed following sketches created by my friend (and scrapbooking mentor!) Susan Stringfellow on her blog Creatively Savvy. I am constantly inspired by her amazing creativity. Our mutual passion for Disney and scrapbooking has blossomed a friendship that spans the miles between Minnesota to Texas. Thank you, Susan, for inspiring me in so many ways.

October is here!

I absolutely adore fall. Mother Nature turns everything to gold and the air becomes crisp. Mums are in bloom, pumpkins adorn front steps and the smell of burning leaves in a campfire fills the air. Soon witches will fly across the moon, ghosts will rattle their chains, and jack-o-lanterns will grin devlishly as trick-or-treaters fill their sacks with sweet treats.

I'm starting off this month with a layout with some of my favorite spooks. Those haunting the Magic Kingdom this time of year during Mickey's Not-So-Scary Halloween Party.

People playing the game may not realize that I created a challenge for myself within this game. The prizes can only be created with items from my stash of scrapbooking/papercrafting supplies with the exception of food items. I admit to utter failure this month. First prize is a spider web chipboard album (complete with adorable spider!) and a bag of candy corn. This spider web album was just way too cute for me to pass up, so I purchased it. So, since I failed that challenge I challenged myself in another way. I was only allowed to decorate the prizes with scraps of paper. No 12x12 pieces of paper were harmed during the making of these prizes. Haha!!

I'm pretty pleased with the results and hope the winners are too. I am really hoping Kelly will like her prize. I'm a little nervous about this one because Kelly absolutely HATES spiders. It's my BFF's birthday today!!

I wanted to write about her and what she means to me on this, her special day.

Sonni makes me laugh like no one else can. Enough to cause tears to stream down my face. We've traveled together several times. Sometimes with the husbands... but most mostly without! Through the years, our lives have changed but our common interests seemed to grow. Most important of those is our mutual love of Disney and of scrapbooking. When we start talking, it can go on for hours. While we scrapbook, over dinner, or over Captain's Mai Tais at Typhoon Lagoon. We understand each other so well. Often to the point of mind reading and the occasional hysterical order to "get out of my head!". She is such a treasure to me.

So I celebrate this day. Because I can't imagine my life without her.

I love you, Sonni! Happy Birthday!

It's been my practice to make each prize a reflection of the month to come. And the first thing that comes to mind when I think about September is apples. Colleen will be receiving a 7-page apple themed mini ring album that she can add her own photos to. Maybe of her and her family enjoying a day of apple picking? Also she'll receive a decorated gift bag with gobs of red apple and green apple Jelly Bellys inside.

I can't tell you how fun this game is for me. I get excited to see so many people participate. However, I've noticed a decline in participation in the later part of the month. Guessing it's because by that time, someone has pretty much taken quite a lead in the points. So, it's time I made the battle for second and third place fun too! The September winner will be receiving a Halloween themed-gift to reflect the coming month of October. And I LOVE Halloween! Also starting in September, I am going to occasionally throw in a line from the script of a Disney theme park attraction. So it's not just movies anymore!

Two Peas in a Bucket - 2009 Disney Challenge #11

For some reason I find myself forgetting to scrap the hundreds of photos I have of the Disneyland Resort. How silly! It's the first Disney theme park I ever visited. And it is after all, the original! But when this challenge was posted, I didn't think I had any photos to scrap of the attractions listed. So I skipped it.

DUH!?!?!

Our challenge master, Tami even has the attractions listed for every Disney theme park around the world! Right there. In black and white. And I still missed it!

Two Peas in a Bucket - 2009 Disney Challenge #12

When my heart starts to feel the tug that tells me it's time to start planning my next trip to Walt Disney World, a few special places drift through my mind. One of them is Castaway Creek at Typhoon Lagoon. I could lie in an inner tube floating around that park all day long. Stopping only for food... and the occasional Captian's Mai Tai.

One our "girls only" vacation in October 2008, Sonni and I made it a point to get to Typhoon Lagoon to enjoy the serenity of Castaway Creek. We had tons of fun. Great conversations went on throughout that day. Lots of female bonding time. So very many great memories from that trip. Our day spent floating along and talking ranks up there as one of the best.

Strawberries and Lemons

Having lots of extra time on my hands recently has caused both some heartache and some joy. I'm trying to find ways to decrease the heartache and increase the joy by getting some things done. Really, really trying to find happiness in each and every day. Whether by doing something special for myself or by getting a long delayed project done. I'm finding that a sense of accomplishment for a job well done is incredibly rewarding.

Cooking has never been my strong suit. I don't read directions thoroughly. As a crafter, I tend to toss aside instruction and go with what I think should be done. That doesn't work so well in cooking. At least not for me. But I continue to try. I decided to make some strawberry jam and some homemade limoncello on a lovely Friday afternoon. The strawberry jam came out sweet and tasty. The limoncello is delicious!! With my leftover lemons, I even made fresh-squeezed lemonade. Dan said it was the perfect blend of tart and sweet and downed his glass very quickly. Occasionally I'm successful!

Prep Time: 30 min ~ Inactive Prep Time: 100 hr ~ Cook Time: 10 min

Level: Easy ~ Serves:7 cups

10 lemons
1 (750-ml) bottle vodka
3 1/2 cups water
2 1/2 cups sugar

Using a vegetable peeler, remove the peel from the lemons in long strips (reserve the lemons for another use). Using a small sharp knife, trim away the white pith from the lemon peels; discard the pith. Place the lemon peels in a 2-quart pitcher. Pour the vodka over the peels and cover with plastic wrap. Steep the lemon peels in the vodka for 4 days at room temperature.

Stir the water and sugar in a large saucepan over medium heat until the sugar dissolves, about 5 minutes. Cool completely. Pour the sugar syrup over the vodka mixture. Cover and let stand at room temperature overnight. Strain the limoncello through a mesh strainer. Discard the peels. Transfer the limoncello to bottles. Seal the bottles and refrigerate until cold, at least 4 hours and up to 1 month.

Tragedy on the Highway in the Sky

I'm sorry to say that I didn't know young Austin Wuennenberg personally, but I am one of the many people mourning for him today. The investigation is in full swing as to how Monorail Pink and Monorail Purple collided at Walt Disney World's Transportation and Ticket Center at 2am on July 5th. The Monorail is an iconic symbol of the Disney theme parks that I love so very dearly. A trip to WDW or DLR just is not complete without a ride on a Monorail. So, it is with a heavy heart that I look at the photos of two of these beautiful trains crushed against each other. That I scan news articles and message boards trying to find an explanation as to how this accident could have possibly happened. Think of a young life taken as he did his dream job. Being a Monorail Pilot is often seen as a dream job for youngsters visiting Walt Disney World and Disneyland. Children of all ages get a thrill from being invited to sit in the front cabin of a monorail. Maybe even pretend that they actually are a Monorail Pilot... if only for a moment.

I adore making chipboard albums. Taking coordinating papers, ribbons, and embellishments and just going crazy! Pouring lots of time and care into a small album with a fun theme. For me, the best part of making these albums is giving them away. This one is going to some close friends as a keepsake to cherish the memories of their three children when they were babies. I'm delivering to them this afternoon. I hope they like it!!

I started posting funny Disney movie quotes as my status on Facebook with the intention of maybe putting a smile on someone's face as they recall a favorite Disney film. From there, it turned into a game complete with rules and monthly winners. It has sparked lots of fun conversations with my friends which is something I am very grateful for.

The prizes are small treasures that I've designed. I've created a challenge for myself within this game too! I am restricting myself to using only the things in my mountainous stash of scrapbooking and paper crafting supplies in my scrap room. I won't allow myself to spend any money (except for maybe a little sweet treat) on these prizes. This is quite a challenge for me since I am very quick to run off to Archivers for inspiration...and end the trip with the resulting dent in my wallet. I welcome this challenge and hope that those participating in the game will enjoy their rewards.

Since Colleen will be recieving her prize at the beginning of July, I decided to go with a patriotic theme. A small barn star and a bag of yummy Hershey Kisses.

The color scheme of the room was inspired by our patriotism and thus, a collection of scrapbook paper by Deja Views called Fresh Print-Cranberry. I've been having a ball making creations to adorn the walls using those papers. Over the last few months, I've been paying close attention to magazines, scrapooking websites, and other blogs to find inspiration. The paper roses were created following a tutorial from Nancy Burke's Scraps and Ink blog. These were a blast to make and I am absolutely thrilled at how realistic they turned out to be. Here are the fruits of my labor as well as a few shots of our new cozy space.

A couple of the panes in the above window frame were inspired by cards created by the amazingly talented Melissa Phillips. The embellished barn star was inspired by a star she posted on her blog, LilyBean's Paperie.

A cute little frame I bought at JoAnn to show off more of these fabulous roses. I just couldn't get enough of them!

Our new bedroom... complete with doggie model, Sasha, showing off our comfy new bed.

I've always looked up to may Dad for his quiet intelligence. I'm so very thankful for everything he has taught me. And for everything he continues to teach me.

My card for him this Father's Day features a photo of he and I at Disneyland in 1977.

I made treat jars this year for the fathers in our lives. Hershey kisses, chocolate chip cookies, and sandwich creme cookies. Each jar has a note attached with a gift card inside. A jar full of sweetness for a Dad who deserves nothing less than every ounce of a daughter's devotion.

Two Peas in a Bucket - 2009 Disney Challenge #9

On our recent trip to Walt Disney World, we were able enjoy the splendor of the Epcot International Flower & Garden Festival. It's a spectacular celebration of spring. The Disney gardeners show off their amazing talents by creating character topiaries. Gardens all over the park explode into a sea of color. The entrance to Epcot is where the main showpieces of the Festival are displayed. There is a different display every year. 2009 was a "Cinderellabration" attendened by Cinderella, Prince Charming, Snow White and the Seven Dwarfs, Princess Aurora, Prince Phillip, Belle, and Beast. All dressed in their floral finery!

Two Peas in a Bucket ~ 2009 Disney Challenge #8

The first time I saw the movie trailer for Cars, I was ecstatic! Disney-Pixar was making a movie about stock car racing and I knew it was going to be fantastic. I wasn't disappointed! Lightning McQueen and Mater are now some of the most beloved animated characters Disney-Pixar has ever created.

The I-35W Bridge

When the I-35W Mississippi River Bridge collapsed in August of 2007, the people of the Twin Cities were absolutely horrified. Nearly everyone either was or knows someone who was on that bridge the week before, the day before, or even the hour before it went down. Dan had been on it twice that day. Many suffer physical and emotional scars from that day. Lives ended in that tragedy, but it's a miracle that so few were actually lost. Truly a miracle.

I recently went across the new I-35W St Anthony Falls Bridge for the first time. It opened in September of 2008 and sits in the exact same spot as the old bridge. A few days ago, some friends and I went for a ride down along the river. In a gated area between the river and the road, twisted pieces of the old bridge still sit. Investigations into the collapse and pending lawsuits have required that the Minnesota Department of Transportation leave the pieces there to rust. It's a chilling thing to see.

We continued on down the road to find ourselves beneath the new bridge. And at night, it's just a beautiful sight. It will be a very long time before anyone crosses the new bridge without thinking about the collapse of the old. The horror is still too fresh in our minds. But a phoenix has risen from the ashes. And time heals all wounds.
